I usually host games (our flagging league, EGFL, was a great opportunity to do this) on EGRadio, and recording them, I've found two ways that work, each with its flaws. The first method is to use Fraps - the flaw being you need a superfast processor and a gem of a graphics card to get a decent framerate at 800x600. I'm running at 3.1GHz/nVidia Geforce FX 5200 128MB, and I get a framerate of just under 15 when I record. The second method is more complicated, but the quality is amazing. If you have an S-Video out, either record to DVD or VHS (then convert to digital), and transfer to your PC. The downfall here is that while the resolution can be amazing(both in size and quality), the file size is huge (relative to the Fraps recordings, which are also very large at decent resolutions). I recorded about 20 minutes of footage and it was 3GB. Hope this sheds some light.
