The NFL does try that (Music City Miracle). They just have better players who know how to defend against plays like that.

Laterals are a standard part of college football. A lot of plays they never try in the NFL are because they actually practice them in college. Went and watched my buddy practice for the Huskies here at UW one time, and they practice all sorts of odd plays they rarely use, but know them really well so if it does come up they can use em. Most NFL teams don't spend time practicing unique plays or how to defend them. Kind of like the shit Miami has been pullin lately, they just don't expect it, and haven't figured out how to defend it yet.

 

Granted yes, that one was a bit outrageous. But I have seen it done many times before where there was 3 or 4 laterals in HS and College games.
